The objective of this chapter is to introduce and to illustrate the frequent and wide occurrence of non-Newtonian fluid behaviour in a diverse range of applications, both in nature and in technology.
A non-Newtonian fluid is a fluid that does not follow Newton's law of viscosity , i. In non-Newtonian fluids, viscosity can change when under force to either more liquid or more solid. Ketchup , for example, becomes runnier when shaken and is thus a non-Newtonian fluid. Many salt solutions and molten polymers are non-Newtonian fluids, as are many commonly found substances such as custard , [1] honey , [1] toothpaste , starch suspensions, corn starch , paint , blood , melted butter , and shampoo. Most commonly, the viscosity the gradual deformation by shear or tensile stresses of non-Newtonian fluids is dependent on shear rate or shear rate history. Some non-Newtonian fluids with shear-independent viscosity, however, still exhibit normal stress-differences or other non-Newtonian behavior.
The paper is devoted to the mathematical modeling of the dynamics of geophysical flows on mountain slopes, e. Such flows can be very dangerous for people and various objects. A brief description is given of models that have been used so far, as well as of new, more sophisticated, models, including those developed by the authors. In these new models, nonlinear rheological properties of the moving medium, entrainment of the underlying material, and the turbulence are taken into account. The results of test simulations of flows down long homogeneous slopes are presented, which demonstrate the influence of rheological properties, as well as of turbulence and mass entrainment, on the behavior of the flow.
